Domini is an award-winning chef, food writer, and entrepreneur. She is CEO of Valence Hospitality – a new hospitality group including Nancy Hands Bar and Restaurant on Parkgate Street and Lottie’s in Rathmines, which has recently been awarded a Bib Gourmand in the Michelin Guide for 2024.
Her academic achievements include an MA in Gastronomy and Food Studies, which she was awarded in 2019. Her five cookbooks and tenure as the Irish Times food writer from 2008-2016 have solidified her status as a respected food-writer. She serves as the resident chef for Food & Wine Magazine and has been recently appointed to the board of Eurotoques.
She has completed the Chartered Director Diploma in the IoD and is currently studying for a Diploma in Culinary Medicine. Her Pg Dip in Positive Health at the Royal College of Surgeons, Dublin, focused on integrated and lifestyle medicine. As a patient advocate, she has presented to healthcare professionals in Ireland and Switzerland, championing the use of food as medicine.
Valence is a new Hospitality Group celebrating its first two openings, Lottie’s in Rathmines and Nancy Hands in Parkgate Street, with more to come.
Tudorel (or Ted as he is usually known) is in charge of the kitchen. Ted arrived in Ireland in 2012 at the tender age of 18, working in bars, gathering wine knowledge, and pursuing a WSET Level 2 training.
He has worked and learned from many great chefs in kitchens such as Mourne Seafood, Fallon & Byrne, Marcel’s, Bijou Bistro, Cleaver East, and a quick stint in Chapter One. He took over as Head Chef in The Green Hen on Exchequer Street showcasing classic French cuisine, then went on to work with Stephen Gibson in Pichet.
From Pichet, he moved to the superb Mister S where he excelled at smoking and open-fire cooking.
We are so proud that Ted achieved a Bib Gourmand for Lottie’s after only 8 months and just before he turned 30 years of age. It is a huge endorsement and acknowledgment by the Michelin Guide of the hard work and commitment of Ted and his kitchen team.
We’re delighted to have Geoff as our GM, whose 34-year career in hospitality has taken him to London, Greece, France, and Switzerland. He’s worked on some impressive openings, including Harvey Nichols group and The Living Room in the UK, and more recently has been with the Winding Stair Group in Dublin.
He studied hospitality in Zurich at the tender age of 18 and has a degree in Maths & Finance, to boot. We’re lucky to have him in Lottie’s, and his high service standards and professionalism have helped us create the relaxed, casual, fun atmosphere that makes Lottie’s such a great choice.
